Flavor Notes:

The scent starts off with a rich, caramelized sweetness. After an initial burst of chocolate, the entire flavor profile takes on a woody quality. It's hard to describe, but "lignin" is really the only term that captures it accurately. This unique flavor gives off hints of bitterness and a touch of astringency. As usual, I'm struggling to find the right words to describe something that is so clear in my mind. The chocolate displays a myriad of earthy notes, reminiscent of browned fruit and gentle acidity. In the previous 18/19 crop, I detected a creamy cherimoya taste... and now, in this dry, slightly browned cherimoya, it's still present. To round out all of these complex flavors, I also detect hints of toasted Brazil nut and a dry, earthy undertone. Some chocolates can be overly sweet, but this one is not, making it perfect for those who prefer their chocolate on the sweeter side.
