Our premium organic cacao is carefully sourced from the Tarapoto region in Peru, where it is organically grown in its natural environment. The cacao fruit is opened and the pulp is removed to get the cacao beans, which are then fermented for 6-7 days, washed, and sun-dried for 3-4 days. Once dried, the beans are crushed to create cacao nibs. These are then ground into cacao paste (cacao liquor) and pressed to separate the pure cacao butter, which makes up around 50% of the cacao paste. The resulting cacao butter is a creamy, white-yellowish color and has a delicious cacao aroma.

 

As used in Sargeantson's 77% cacao dark range, 40% cacao milk range, 37% cacao white range & Amy's Brownies.
